Perhaps it’s no coincidence that the founders of Fladerei have been childhood friends since time immemorial.
Building Fladerei: A Journey of Tradition and Taste
As the founder of Fladerei, I started with a single vision to create something special. Over time, what began as my personal journey grew into a thriving franchise shaped by a team of childhood friends who share my passion for food and hospitality. Together, we’ve turned this idea into a brand that celebrates connection, creativity, and the joy of good food.
My story in hospitality began with my three brothers when we opened a bar called Club Berlin. Within months, it became a lively, bustling hotspot that brought people together. Riding the wave of this success, my oldest brother introduced me to a cozy spot he frequented called Kolar, known for its simple, delicious flatbreads. At first, I wasn’t convinced—my vision leaned toward something trendier—but after some spirited debates, my brothers outvoted me. We took over Kolar, a beloved staple since its opening in 1985, and this decision became a turning point in my career.
A few years later, a trip to New York sparked an idea: what if we could bring our flatbreads to America? Friends there were enthusiastic about the concept, but my focus shifted as I explored other ventures. Over the next decade, I dabbled in everything from an American-themed bar and a boutique hotel to a Mediterranean restaurant and a Cuban-inspired bar. Some ventures thrived, while others faced challenges, but Kolar remained my steady anchor. Its consistent success fueled my ideas and proved resilient through every high and low.
Through these experiences, I grew to appreciate what made Kolar truly special. It was dependable, welcoming, and embodied a warm simplicity that became the cornerstone of my service philosophy. Guests felt at home, and I realized that this atmosphere was what set it apart. With a renewed appreciation for its charm, I saw the potential to expand on its foundation, and Fladerei was born—a timeless flatbread experience rooted in authenticity and warmth.
By 2015, I was ready to share Fladerei’s unique appeal with a broader audience, turning it into a franchise. Today, Fladerei has flourished into a network of five thriving locations across Vienna, run by a close-knit team of childhood friends who embody the spirit of partnership that defines our brand. Together, we have built something that is not only simple and satisfying but also refreshingly personal.
Even the name, Fladerei—a playful twist meaning “theft” in Austrian dialect—reflects the spirit of our brand, brought to life in our mascot and logo. Fladerei has proven to be resilient and timeless, staying true to its roots while growing into something much larger than I ever imagined.
Now, years after that initial idea, the dream of sharing our flatbreads beyond Austria feels like it’s coming full circle. I couldn’t be more excited to take this next step with my team as we bring Fladerei to the USA.
